It might very well be your body adjusting to a totally different eating model, and transitioning to burning more ketones rather than glucose for fuel. Detoxing from a diet high in simple carbs and sugar can also produce the unpleasant symptoms you are experiencing.
You might consider increasing your portions of complex carbs and fruits in your later meals, and see if this helps. You might also try adding in more snacks throughout the day that are rich in fats, which can help you stay satiated and ward off cravings. Make sure you are drinking plenty of water and try adding a pinch of Himalayan or Celtic salt to your water to balance electrolytes.
